Inji Curry is main dish in Kerala Sadhya. It is  very delicious and healthy side dish.  Ginger is highly nutritious and also helps in digestion. This version of Inji curry is Trivandrum style.

Ingredients

Serves : 30
  • Ginger chopped -500 gms


  • Green chilly -2 nos.


  • Oil - 1/2 cup (for frying)


  • Tamarind - 1 small gooseberry size


  • water - 1/4 cup


  • Salt - 1/2 teaspoon or as required


  • Jaggery - 2 tablespoon


  • Kashmiri chilly powder - 1 teaspoon


  • Asafoetida powder 1/4 teaspoon


  • Red chilly - 2 nos.


  • Curry leaves - 8 nos.
