chopped onion 1/2 cups
Cooked Rice 1 cups
Chopped fresh parsely 2 tbsp
Sweet potato cooked and mashed:medium size 1 nos
Garlic powder 1 tsp
Grated Parmesan cheese 1 cups
Mozzarella cheese grated 1/4 cups
Dried basil leaves 1 tsp
Black pepper powder 1/4 tsp
All purpose flour 1/4 cups
Dry bread crumbs 1/2 cups
Salt as per taste 1 1/2 tsp
Water as required 1/4 cups
Oil for deep frying As required 1-2 cups
In a big bowl add rice, garlic powder, chopped onion,parsley,mashed sweet potato,dried basil leaves,black pepper and 2 Tbsp bread crumbs.
Add parmesan cheese,mozarella cheese,salt and mix everything well.
Apply little water on your palm.
Take a small portion of mixture in your hand and shape into small ball.
Repeat the same process with the remaining mixture.
In a wide bowl ,mix the flour with water to get a flour paste and keep aside.
In another plate ,spread bread crumbs and keep aside.
Grease big plate with little oil and keep aside.
Dip the prepared coquette in the flour paste and then roll it on the bread crumbs until evenly coated.
Repeat the same process for all the croquettes.
Heat a deep pan with oil for deep-frying.
Fry in hot oil over medium heat until brown on all sidea by turning then often.
Drain the excess oil on a paper napkin.
Serve hot with sauce of your choice.
