Ingredients

Serves : 6
  • 2 medium zucchini cut 1/4 inch round
  • 1/4 cup pizza sauce
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup shredded pizza cheese
  • 3-4 tbsp extra virgin olive oil
  • 1 tbsp oregano, parsley to sprinkle

Directions

  • Preheat oven to 180. Line baking tray
  • Place zucchini on tray. Brush with olive oil. Bake for 4-5 minutes
  • Dab pizza sauce on baked zucchini. Add vell pepper and cheese on top. Sprinkle with oregano and parsley
  • Return to oven. Bake for 3-4 minutes. Serve hot
