Pressure cook dal with water and turmeric until tender. Mash dal and keep it aside
In a pan, heat oil and roast ingredients mentioned under sambar powder section until brown. Allow to cool completely. Add watee and grind to smooth paste. Keep it aside
In. Seperate pan, heat 2 tbsp oil. Fry curry leaves, shallots, green chillies for few minutes. Add tomatoes and saute
Add all veggies , turmeric. Roast for 5 minutes
Add salt and water. Cover and cook for 10 minutes until veggies are tender
Add ground paste to veggies and mix well
Add tamarind pulp, dal and jaggery. Mix well. Simmer and cook for 15 minutes
Heat ghee in a pan. Splutter mustard seeds and cumin seeds. Add hing, urad dal, dry red chilli. Saute until dal is brown. Add curry leaves. Switch off
Add seasoning to sambar with coriander leaves. Mix well. Serve hot
