Ingredients

Serves : 6
  • 1 tsp grated jaggery


  • 2 tbsp oil


  • 2 sprig curry leaves


  • 2-3 tbsp chopped coriander leaves


  • 2-3 nos green chillies slit


  • 2 nos tomatoes chopped


  • 2-3 tbsp tamarind pulp


  • 1 tsp turmeric


  • 8-10 nos sambar onions peeled


  • 1 tsp salt or as per taste


  • 1 cups for pressure cooker:toor dal


  • 3 cups water


  • 3/4 tsp turmeric


  • 6-8 nos for sambar powder : dry red chili


  • 1 tsp fenugreek seeds


  • 4 tbsp grated coconut


  • 5 tbsp coriander seeds


  • 1 1/2 tsp cumin seeds


  • 2 tbsp chana dal


  • 2 tbsp urad dal


  • 1 tbsp oil


  • 1 nos for veggies: potato cubed


  • 1 nos carrot cubed


  • 5-6 nos beans chopped


  • 2-3 tsp small brinjal chopped


  • 1/2 cups ladies finger chopped


  • 1 cups pumpkin cubed


  • 2 tbsp for seasoning: ghee


  • 1 tsp mustard seeds


  • 1 tsp hing


  • 1 tsp urad dal


  • 1 sprig curry leaves


  • 2 nos dry red chili broken


  • 1/2 tsp cumin seeds

Directions

  • Pressure cook dal with water and turmeric until tender. Mash dal and keep it aside
  • In a pan, heat oil and roast ingredients mentioned under sambar powder section until brown. Allow to cool completely. Add watee and grind to smooth paste. Keep it aside
  • In. Seperate pan, heat 2 tbsp oil. Fry curry leaves, shallots, green chillies for few minutes. Add tomatoes and saute
  • Add all veggies , turmeric. Roast for 5 minutes
  • Add salt and water. Cover and cook for 10 minutes until veggies are tender
  • Add ground paste to veggies and mix well
  • Add tamarind pulp, dal and jaggery. Mix well. Simmer and cook for 15 minutes
  • Heat ghee in a pan. Splutter mustard seeds and cumin seeds. Add hing, urad dal, dry red chilli. Saute until dal is brown. Add curry leaves. Switch off
  • Add seasoning to sambar with coriander leaves. Mix well. Serve hot
