Ingredients

Serves 2

  • long grain white rice/ brown Basmati rice cooked 200 gms

  • spring onion greens cleaned,chopped finely 20 gms

  • baby spinach cleaned,chopped fine 50 gms

  • fenugreek leaves cleaned, chopped fine 50 gms

  • kale/ any other green leaves of your choice chopped fine 50 gms

  • fresh/frozen green peas 100 gms

  • small onion chopped 1 nos

  • cumin seeds 1 tbsp

  • asafoetida 1 pinch

  • salt 1 1/2 tsp

  • coriander leaves chopped 50 gms

  • Olive or Vegetable Oil 2 tbsp

  • Black Pepper Powder 1 tbsp

  • Ginger Garlic Paste 1 tbsp

  • Green chillies,finely chopped 2 nos

  • Lemon Juice 1 nos

Directions

    Add a tbsn of oil in a wok/ non stick pan and let it heat

  • 02

    Add cumin seeds and asafoetida and wait till cumin splutters

  • 03

    Next add chopped green chillies, onions and sauté till translucent

  • 04

    Throw in the green peas, add ginger garlic paste and sauté for another minute or so

  • 05

    Finally add the spinach, fenugreek, kale leaves and spring onion greens

  • 06

    Combine well and sauté till the green are wilted a bit

  • 07

    Add the rice and mix well

  • 08

    Sprinkle salt to taste, lemon juice and black pepper powder

  • 09

    Combine all ingredients well and take of heat after adding chopped coriander leaves

  • 10

    Serve hot with your favourite curries/raitas
