Ingredients

Serves : 2
  • 200 gms long grain white rice/ brown basmati rice cooked


  • 20 gms spring onion greens cleaned,chopped finely


  • 50 gms baby spinach cleaned,chopped fine


  • 50 gms fenugreek leaves cleaned, chopped fine


  • 50 gms kale/ any other green leaves of your choice chopped fine


  • 100 gms fresh/frozen green peas


  • 1 nos small onion chopped


  • 1 tbsp cumin seeds


  • 1 pinch asafoetida


  • 1 1/2 tsp salt


  • 50 gms coriander leaves chopped


  • 2 tbsp olive or vegetable oil


  • 1 tbsp black pepper powder


  • 1 tbsp ginger garlic paste


  • 2 nos green chillies,finely chopped


  • 1 nos lemon juice

Directions

  • Add a tbsn of oil in a wok/ non stick pan and let it heat
  • Add cumin seeds and asafoetida and wait till cumin splutters
  • Next add chopped green chillies, onions and sauté till translucent
  • Throw in the green peas, add ginger garlic paste and sauté for another minute or so
  • Finally add the spinach, fenugreek, kale leaves and spring onion greens
  • Combine well and sauté till the green are wilted a bit
  • Add the rice and mix well
  • Sprinkle salt to taste, lemon juice and black pepper powder
  • Combine all ingredients well and take of heat after adding chopped coriander leaves
  • Serve hot with your favourite curries/raitas
