Green Fried Rice

Ingredients

200 gms long grain white rice/ brown basmati rice cooked
20 gms spring onion greens cleaned,chopped finely
50 gms baby spinach cleaned,chopped fine
50 gms fenugreek leaves cleaned, chopped fine
50 gms kale/ any other green leaves of your choice chopped fine
100 gms fresh/frozen green peas
1 nos small onion chopped
1 tbsp cumin seeds
1 pinch asafoetida
1 1/2 tsp salt
50 gms coriander leaves chopped
2 tbsp olive or vegetable oil
1 tbsp black pepper powder
1 tbsp ginger garlic paste
2 nos green chillies,finely chopped
1 nos lemon juice
Directions
Add a tbsn of oil in a wok/ non stick pan and let it heat
Add cumin seeds and asafoetida and wait till cumin splutters
Next add chopped green chillies, onions and sauté till translucent
Throw in the green peas, add ginger garlic paste and sauté for another minute or so
Finally add the spinach, fenugreek, kale leaves and spring onion greens
Combine well and sauté till the green are wilted a bit
Add the rice and mix well
Sprinkle salt to taste, lemon juice and black pepper powder
Combine all ingredients well and take of heat after adding chopped coriander leaves
Serve hot with your favourite curries/raitas
