A healthy combination of fresh vegetables along with the wheat fusili pasta and dressing. It is light and delicious, cool and refreshing.

Ingredients
Serves : 2
1 cups wheat fusili paste
1 nos tomato diced
1 nos cucumber diced
1 tbsp sweet corn kernels
1 nos small carrot chopped and steamed
1/2 nos green capsicum chopped
1/2 cups green french beans chopped and steamed
1/2 nos onion chopped
1/4 tsp salt or to taste
1/4 tsp freshly pounded black pepper or to taste
2 nos for the vinaigrette dressing:fresh garlic cloves,(crushed)
2 tbsp white vinegar
1 tsp mustard sauce
2 tbsp olive oil
1 tbsp fresh basil
1/2 tsp oregano for the garnish
1 tsp spring onion greens
Directions
In a wide pan, boil water, add salt and 1/2 teaspoon olive oil, subsequently add the pasta and cook till the pasta is al dante .( it should be soft but firm).
Stir in between to prevent the pasta from sticking together.
Drain it in a colander and pour cold water to refresh, add another 1/2 teaspoon oil to it and keep it aside.
For the dressing
Blend all ingredients listed under vinaigrette dressing in a mini food processor, until emulsified/creamy.
Combine the pasta, the dressing and all the vegetables and seasonings together in one large bowl.
Mix gently and garnish with oregano and spring onion greens and serve immediately with garlic bread or just like that.
