Mughlai Chicken Lababdar

Chicken -large , finely chopped 1 kgs
Ginger and garlic paste 1 tbsp
Tomato and green chili paste 1/2 cups
Curd 1/2 cups
Chili powder 1 tsp
turmeric powder 1 tsp
cumin powder 1 tsp
Coriander powder 1 1/2 tsp
Salt - as required 1 tsp
Sugar 1/2 tsp
Melon seeds and cashewnut paste 2 tbsp
Fresh cream 4-5 tbsp
Kasurimethi 1 tbsp
Heat kadai with 3 tbsp oil , add bay leaf , cinnamon , green cardamom.
Once you get nice aroma ,add chopped onion , stirring continueously untill onion well browned.
Then add ginger and garlic paste . stirring it for a minute.
Then add tomato and green chili paste ..mix well
Now add all chicken pieces , curd and all dry spices and salt and sugar..give a nice stir to mix well everything..
Cook it for 5-6 minutes or till oil leaves..
Then add melon seeds and cashewnuts paste ..mix well.
Now add 1 cup water..give a good stir...cover it and cook it on low-medium flame for 20-25minutes or till chicken cook through..
After chicken cooked well , add fresh cream and kasuri methi..mix well..check seasoning...
Keep gravy as per your desire consistency..
Serve chicken lababdar with lachha paratha, Roti ,Naan or whatever you like
