Ingredients

Serves 4

  • boneless chicken sliced 300-350 gms

  • For Marination: Yoghurt 1/2 cups

  • Vinegar 2 tsp

  • Olive Oil 1 tsp

  • Garlic Clove,crushed 1 nos

  • Pepper 1/4 tsp

  • Red Paprika 1/4 tsp

  • Cinnamon 1/4 tsp

  • Nutmeg 1/8 tsp

  • Ground Cloves 1/8 tsp

  • Ground Cardamom 1/4 tsp

  • Lemon Juice 2 tsp

  • Salt or as per your taste 1 tsp

  • For Shawarma sauce: Tahini (homemade or store-bought) 1/2 cups

  • Garlic Cloves,crushed 1/4 nos

  • Yoghurt 1 tbsp

  • Lime Juice 2 tsp

  • For Pita Bread: Warm Water 1/4 cups

  • Active Yeast 2 tsp

  • All purpose flour 3 cups

  • Salt 2-3 tsp

  • Olive Oil 2 tsp

  • For Assembling Shawarma: Onion thinly sliced 1 nos

  • tomato de seed thinly sliced 1 nos

  • cucumber sliced 1 nos

  • Lettuce Leaves 3-5 nos

  • Chopped Parsley 1/4 cups

  • Lemon Juice 1/4 tsp

Directions

    In a large bowl, combine all ingredients mentioned under Marination section and mix well. Add chicken slices and coat well. Cover and refrigerate. Marinate for 12-14 hours

    In a large saucepan, cook chicken until done. Don't overcook

    While chicken is cooking prepare sauce. Mix tahini, crushed garlic, lemon juice and yoghurt. Keep it aside

    For pita bread, mix water and yeast together, let it sit for 10 minutes . Add flour and oil and knead for 10 minutes to form smooth elastic dough. Film bowl with oil , add dough , allow to coat with oil. Cover and let it rest for 1-2 hours

    Gently deflate dough. Place dough on dusted flour surface. Divide into equal balls and roll into roti

    Heat skillet and cook pita bread on both sides until golden brown

  • 07

    To assemble the wrap: in a large bowl, add tomatoes, onions, cucumbers and sprinkle with lemon juice or zest,salt and pepper. You may add pickles too for additional taste. Add parsley and mix well. Set aside

    Place enough chicken slices on pita bread so that it covers 1/4 of bread. Add veggies and now add prepared shawarma sauce on top. Roll gently and serve warm with falafel, salads or hummus
