Ingredients

Serves : 4
  • 2 tbsp vegetable oil


  • 4 nos flour tortillas


  • 1/4 cups white onion chopped


  • 300 gms boneless chicken diced into 1/2" inch pieces


  • 1 tsp salt


  • 1/2 tsp pepper


  • 4-5 nos green chillies finely chopped


  • 3/4 cups cooked black beans


  • 1 cups enchiladas sauce


  • 1 1/2 cups shreeded cheese


  • 2 tbsp cilantro for garnish

Directions

  • Preheat oven to 180, grease square or rectangular dish
  • Heat oil in a pan, saute onions until soft
  • Add green chillies, pepper and salt, saute for few seconds
  • Add chicken and mix well. Cook for 8-9 minutes. Keep it aside
  • Place tortilla on a plate, apply sauce all over tortilla. Add spoonful of black beans, chicken and 1 tbsp cheese in centre
  • Roll the tortillas and placs in greased pan. Do until all tortillas are completed
  • Add remaining sauce on top of tortillas
  • Sprinkle remaining cheese on top
  • Bake for 15-20 minutes. Garnish with cilantro and serve warm
