Ingredients

Serves 6

  • chicken legs/ whole chicken pieces 1 kgs

  • Shallots 250 gms

  • Lemon Grass Stalks 4 nos

  • Curry Leaves 2 sprig

  • Chilli Padis 5-6 nos

  • Garlic Cloves 5 nos

  • Ginger Peeled 2 inch

  • Eggs 2 nos

  • turmeric powder 1 tbsp

  • Coriander Powder 1 tbsp

  • Red Chili Powder 1/2 tbsp

  • Curry Powder 1 tbsp

  • Cornflour 5 tbsp

Directions

    Wash and clean the chicken pieces well and place them in a bowl

  • 02

    Roughly chop the shallots, lemon grass,chilli padis,garlic and ginger

  • 03

    Add the chopped ingredients in a blender and blend into a paste without any water

  • 04

    Add the blended paste to the chicken

  • 05

    Add the dry spices next

  • 06

    Beat the eggs and add them next. coat the chicken pieces well with the paste,eggs and spices

    Finally add the salt, curry leaves and cornflour and coat every chicken piece well

  • 08

    Cover and refrigerate for an hour for the chicken to marinate in the flavours

  • 09

    Heat enough oil for deep frying and fry the chicken pieces in batches until both sides are crisp and brown

  • 10

    Rest the fried chicken on an absorbent paper to drain excess oil

  • 11

    Serve hot with chilled yogurt-mint dip. Enjoy!!
