When Mangoes are in season I am sure all must be relishing them. The mango Shrikhand or Aamrakhand is a very humble yet exotic and quick mango dessert with all the goodness and flavours of mangoes to satiate one's sweet tooth. Aamrakhand is a thick and rich creamy yoghurt recipe. Its a twisted version of shrikhand with addition of mangoes and dry fruits.

Ingredients

Serves : 2
  • 3 cups curd fresh


  • 2 nos mangoes peeled and chopped


  • 4 nos cardamom, (elaichi) crushed


  • 1 cups powdered sugar or as required.


  • 1/4 tsp saffron strands/kesar


  • 2 tbsp for the garnish : mixed dry fruits like cashews, pistachios.


  • 1 tsp almonds blanched and chopped


  • 1 tbsp mango chunks (optional)

Directions

  • Hang the curd in a muslin, cheese cloth for 3 hours.
  • Puree the mangoes in a blender until smooth.
  • Blend the thick hung curd with a blender
  • Add mango purée and blend again until mixture is smooth and lump free.
  • Add sugar, chopped dry fruits and cardamom powder and blend again until smooth
  • Pour shrikhand in individual serving bowls.
  • Chill and serve the aamrakhand after garnishing with dry fruits and saffron.
  • It goes well with pooris, paranthas or you can have just like that
