Milk 1 1/2 litre
Cornflour 1 1/2 tbsp
Milk Powder 3 tbsp
Sugar or Honey 3 tbsp
Black Raisins Wash and Soak in 2 cups of water for 3-4 hrs 50 gms
black current emulsion 1 tsp
black current mapro crush 1/2 cups
G.M.S powder 1 1/2 tbsp
stablizere 1/8 tsp
Black Currant Ice-cream is a rich textured low calorie ice cream, blended with delicious and healthy black currant and low fat milk. It is the nicest smooth rich and velvety icecream.
Mix all the dry powder in 1 cup cold milk and keep aside
Boil 1/2 ltr milk in a heavy bottom pan ..after the 1st boil put on low flame .
Now add the cold milk paste and sugar and keep stirring contiuously to avoid getting lumps ..
Boil for 4-5 mins.Remove from fire and cool ..freeze it for 3-4 hours..
Your base of icecream is set.Now take a small pan and cook the black raisins by adding 1 tbsp of sugar.
Use the same water in which you have soaked. Cook till tbe raisins are tender and mashed properly.
Take the icecream base cut into pieces and beat it well with a beater..till it is fluffy and smooth and double the quantity.
Now add the black current crush raisins paste and emulsion and whisk it again till its completely mixed .
Put the mixture in a setting dish andfreeze for 4_5 hours or till it is set...
