Ingredients

Serves : 4
  • 1/2 litre full fat milk


  • 1 cups heavy cream


  • 2.5 tsp vanilla extract (2 vanilla pods)


  • 1 nos egg


  • 3 nos egg yolks


  • 3/4 cups sugar

Directions

  • Mix milk and vanilla together on low heat. do not boil
  • Beat sugar, egg and egg yolks until pale and frothy in a seperate bowl using hand or stand mixer
  • Add 1/4 cup of warm milk mixture to egg mix and blend well
  • Now pour the egg mixture to milk and return saucepan to heat
  • Stir constantly on low to medium heat until it starts thickening. do not boil. remove vanilla pods from mixture if using it
  • Allow to cool completely. Add cream and blend well. Pour in chilled air tight container and freeze for 2 hours
  • Blend once again and freeze for 6-7 hours or overnight. scoop and serve
