Ingredients

Mutton 500gms
Ginger paste 1 teaspoon
Garlic paste 1 teaspoon
Cloves-2
Cinnamon-1 inch
Star Anise 1
Cardamom 2
Coriander 1 spoon
Saijeera 1/2 spoon
Pepper 1/2 spoon
Fennel seeds 1/2 spoon
Chilli powder 1 spoon
Salt 2 spoons
Water 5 cups
Seeraga Samba Rice 2 1/2 cups
Turmeric powder 1 spoon
Oil 2 teaspoon
Ghee 2 teaspoon
Mint leaves 1 cup
Coriander leaves 1 cup
Finely chopped onions 3
Finely chopped tomatoes 3
Directions
Cook Mutton with 5 cups water for 10 minutes in medium flame in a cooker with turmeric powder and half of ginger garlic paste.
Dry roast Coriander seeds, fennel seeds, sai jeera, pepper, cloves, cardamom and cinnamon.
Cool it and grind it into a fine powder.
After 10 minutes open the cooker.
Measure the water.
If it is less than 5 cups add some water and make ready 5 cups water.
Put the cooker in the stove.
Add oil and ghee.
When it is hot add 1 bay leaf.
Add finely chopped onions.
Saute it until golden brown.
Add tomatoes and mint leaves.
Saute it for 5 minutes.
Now add remaining half of the ginger garlic paste.
Saute until raw smell goes.
Add chilli powder, BIRIYANI masala powder and salt.
Add washed rice.
Saute it for 3 minutes.
Now add 5 cups water with Mutton.
Close the cooker lid.
After steam comes put cooker weight.
After first whistle simmer the stove.
Cook it for 5 minutes in very low flame.
Switch off the gas.
After 10 minutes open the cooker.
Take away the cooker lid.
Close it with a ordinary plate.
Place a bowl of boiling water on the plate.
Place this arrangement on a hot tawa.
Open after 10 minutes.
Garnish with coriander leaves.
Serve hot with boiled egg.
