Ingredients

Serves : 4
  • 500 grm mutton chanp


  • 50 grm some raisins, few for garnish


  • 25 grm fennel seeds


  • 2 tbsp mint leaves


  • 1 tsp chopped ginger


  • 1 tsp chopped garlic


  • 80 grm whisked curd


  • 1/2 tsp turmeric powder


  • 2 tbsp brown onion


  • 6 to 8 almonds


  • 6 to 8 cashews


  • 1 tbsp lemon juice


  • 1 tsp garam masala


  • 3/4 black pepper powder


  • 3 tbsp doodh ki malai


  • 1 tbsp oil or pure ghee


  • 1 tsp salt or as per taste


  • For garnish,1 onion rings,lemon wedges and chat masala


  • 1 Coal for smoky flavour

Directions

  • Take fried onion,cashews, almonds,fennel seeds,mint leaves and raisins in mixer jar and make paste of it
  • Take chanp in a deep bowl,add whisked curd, turmeric powder,garam masala,black pepper powder,lemon juice,chopped ginger and garlic,salt and 2 tsp doodh ki malai (1 remain) and mix well
  • Now add paste in this
  • Now mix all masala on chanp nicely and cover it left it to marinate for atleast 4 to 5 hours (if marinate whole night inhance the taste)
  • After marinate add remaining malai and mix again
  • Now take chanp with masala in heavy pot pan coverbit and cook it for 20 to 25 minutes or till done (do not add water to cook)
  • Meanwhile stirring but pieces not break
  • Now place chanp in rack,burn coal,add some pure ghee and cover tbis immideitly for smoky flavour
  • Now smoky saufiyan chanpein are ready to serve,serve hot with onion rings,few raisins and lemon wedges
  • Sprinkle some chat masala over the top for more taste
  • Tip- Use doodh ki malai because It's gives liquid to cook and on slow cooking enhance it's taste
