Ingredients

Serves 4

  • 1/2 kg mutton mix

  • 1 onion sliced

  • 1 tsp ginger paste

  • 1 tsp garlic paste

  • 1 tsp red chilli paste

  • 1/4 tsp Turmeric powder

  • 2 tomato blanched and grind

  • 1/2 tsp black pepper corn

  • 1 cinnamon stick

  • 3 to 4 cloves

  • 1 black cardamom

  • 2 bay leaves

  • 12 cashew nuts

  • 1 tsp Poppy seeds

  • 1 tbsp sesame seeds paste

  • 1/2 tsp black mustard seeds

  • 2 kashmiri red chilli

  • 1 tsp salt or as per taste

  • 1/4 cup oil

  • For Tempting, 1 tbsp pure ghee

  • 10 to 12 thin ginger slice

  • For Garnish, 1 tbsp fried brown onion

  • 1 tbsp crushed cashew

  • 1 tbsp chopped corriender

Directions

    Roast cashew nuts, black pepper, cinnamon, cloves, black cardamom seeds, kashmiri red chilli, sesame, poppy and mustard seeds, bay leaves untill fragrant.

    Let them rest to cool

    Transfer in mixer jar add little water, grind and make thick paste of it.

    Heat oil in a pan add sliced onion, fry till light brown in colour

  • 05

    Now add mutton mix well till the colour change

  • 06

    Now add ginger and garlic paste and mix for 2 to 3 minutes

    Add tomato paste and again stir 

  • 08

    Now add turmeric,chilli powder and salt and again cook for 4 to 5 minutes

    Now add 1/2 cup water gradually and stir in between,cover and cook untill mutton is tender

    Now add grind cashew and Spices paste in it and mix

  • 11

     Add water ( requiere consistency of shorba) and mix

  • 12

    Now cover and cook on low flame for 10- 12 minutes

  • 13

    For Tempting, Heat the pure ghee in pan add sliced ginger and pour this on mutton pan and cover this

  • 14

    Garnish with some brown onion,crushed cashew and with chopped corriender

  • 15

    Serve hot with chappati and rice. Now Mughlai Darbari Gosht is ready to serve
