Ingredients
Serves 4
Mutton 1 kgs
mustard oil 1/2 cups
cumin seeds 2 tsp
onions sliced 3 nos
garlic crushed 2 tbsp
garlic chopped 2 tbsp
red chilli powder 2 tbsp
turmeric powder 1 tsp
green chilli chopped 4-5 nos
tomatoes finely chopped 3 nos
deshi ghee 2 tbsp
lime juice 1 tbsp
Green coriander leaves finely chopped 1 tbsp
garam masala 1 tbsp
nutmeg grated 1 tbsp
Directions
Nutmeg grined them into a powder using a mixcuer grinder.
Nutmeg powder and garam masala mix well and keep it a side
Heat mustured oil in a heavy bottom pan to smoking point and cumin seeds.
Add onions, Green chilli, ginger, garlic and saute for 10 minutes.
Add red chilly powdere, turmuric powder and mix it properly.add tomatoes salt and sugar.
Let it cook for 15 to 20 minuteson midiom flams till tomatos are soft. and the oil has risen on the top sprinkell littel water.
Now mix mutton and let it cook for 20 to 25 minuts till it is rich and fully coated with all spices.
Add ghee for the flavors. cover the pan with a lid. and let the mutton cook in its own juices for about 30 to 45 minuts.
Half way through, sprinkel 1 big tablespoon garam masala.
Once the mutton is tender,add some chhoped coriender, lime juice and serve hot.
Serve himachali mutton Rarra along with some steemd rice, fulkas ar paratha.
