Ingredients

Serves 10

  • Mutton (chops, marrow, shoulder, hind leg boti) 2 kgs

  • onion 500 gms

  • ginger 50 gms

  • garlic 50 gms

  • green chillies 8-10 nos

  • whole dry red chillies 5 nos

  • cloves 5 nos

  • cardamoms 8 nos

  • bayleaves 2-3 nos

  • Black cardamom 2 nos

  • Cinnamon sticks 2 nos

  • Cumin 1 tsp

  • Coriander seeds 1 tsp

  • Nutmeg 1/8 nos

  • Desi ghee 100 gms

  • cloves 2-3 nos

  • Pepper corns 1 tsp

  • bayleaf 2 nos

  • Cardamoms 2 nos

  • Salt 1 1/2 tsp

  • Turmeric 1 tsp

  • Kashmiri mirch powder 1 tsp

  • Coriander powder 1 tsp

  • tomatoes 500 gms

  • Garam masala powder 1 tsp

Directions

    Make a purée of onion, ginger, garlic and green chillies.

    Heat ghee, crackle bayleaf, cloves, cardamoms and peppercorns.

    Add the onion purée and sauté for 10-12 minutes.

  • 04

    Add salt, turmeric, Kashmiri mirch, coriander powders and mix well.

  • 05

    Add the Mutton and continue on high heat to sear well for about 15 minutes.

    Add chopped tomatoes and bhunno, stirring continuously.

  • 07

    Add in the spice powder mix and continue to let cook on a medium heat for about 25-30 minutes.

    Cover and cook for another 10-12 minutes till Mutton is tender and almost all moisture is evaporated.

    Enjoyed best, served hot with Tandoori roti/naan.

    PS : spice powder mix is a fine powder to be blended with the spices mentioned before desighee.
