Ingredients

Serves : 6
  • 1 kgs mutton boneless (goat meat)


  • 400 gms garlic


  • 400 gms ginger


  • 40 gms cloves


  • 40 gms black cardamom seeds


  • 50 gms black pepper


  • 500 gms vinegar


  • 1 tsp turmeric powder


  • 2 tsp red chilly powder


  • 1 kgs vegetable oil


  • 6 tsp salt


  • 1/2 kgs onions

Directions

  • soak mutton in vinegar for 6 hrs
  • take the mutton out and leave to dry for an hour
  • deep fry the mutton till reddish brown
  • make a paste of ginger and garlic
  • grind onion to paste
  • grind cloves and black cardamom seeds
  • heat 500 gm of oil in a pan, fry onion paste, ginger garlic paste well
  • add cardamom seeds and cloves powder in it
  • as the mixture turns reddish brown add turmeric, salt, black pepper and red chilly powder
  • now put the mutton in it and cook well for 20-25 mins
  • leave uncovered in the same pan till it cools
  • pickle is ready
