Ingredients

Serves 6

  • mutton boneless (goat meat) 1 kgs

  • garlic 400 gms

  • ginger 400 gms

  • cloves 40 gms

  • black cardamom seeds 40 gms

  • black pepper 50 gms

  • vinegar 500 gms

  • turmeric powder 1 tsp

  • red chilly powder 2 tsp

  • vegetable oil 1 kgs

  • salt 6 tsp

  • onions 1/2 kgs

Directions

    soak mutton in vinegar for 6 hrs

  • 02

    take the mutton out and leave to dry for an hour

  • 03

    deep fry the mutton till reddish brown

  • 04

    make a paste of ginger and garlic

  • 05

    grind onion to paste

  • 06

    grind cloves and black cardamom seeds

  • 07

    heat 500 gm of oil in a pan, fry onion paste, ginger garlic paste well

  • 08

    add cardamom seeds and cloves powder in it

  • 09

    as the mixture turns reddish brown add turmeric, salt, black pepper and red chilly powder

  • 10

    now put the mutton in it and cook well for 20-25 mins

  • 11

    leave uncovered in the same pan till it cools

  • 12

    pickle is ready

    Note: don't use wet hands or wet utensils
