Ingredients

  • • 5-6 Goat meat Chops


  • • 3 Tbsp of Olive oil


  • • 1 Sprig of fresh Rosemary herb


  • • 2 tsp dried Italian seasoning


  • • 2 tsp of Onion powder


  • • 1 Lemon- Juice and Zest


  • 2 onions


  • 2 carrots


  • 2 sticks celery


  • 1 bulb garlic


  • 1 bay-leaf


  • 3 tbsn of red wine


  • 1-2 cups of lamb stock


  • 1 tbsn cornflour


  • 1 kg baby potatoes


  • 3 tbsn Butter


  • 1 cup whole Milk


  • 2 Tbsp Heavy Cream


  • 2 tsp Salt or to taste


  • 2 tsp Pepper or to taste

Directions

  • Let us begin by marinating the Goat chops. In a bowl, combine the olive oil, rosemary, lemon zest and juice, Italian seasoning, onion powder, salt and pepper.
  • Throw in the goat chops and mix well with marinade. Cover and place in the fridge to marinate for a couple hours.
  • Preheat the grill over medium heat. Place the marinated goats chops on the grill and cook them for about 3-4 minutes on each side till you get a nice sear and the meat looks well-cooked. Transfer the grilled chops on a plate to cool.
  • To make the gravy- Wash the vegetables. Peel the carrots and onions. If needed, chop them roughly into big chunks. No need to chop them finely at all. Break the garlic bulb into cloves, leaving them unpeeled.
  • Drizzle the grill with some Olive oil. Scatter all the veggies, a few garlic cloves and your herbs onto it and grill them till they look cooked and crispy. Season with salt and pepper.
  • Transfer the grilled veggies to a sauce-pan along with the lamb stock. Put on low heat. Use a potato masher to mash all the roasted veggies to a pulp while on heat. They will already be very soft and will instantly melt away into the hot liquid.
  • Next, add the wine and let it cook for a couple of minutes more. Bring everything in the pan to the boil and then reduce the heat and simmer for 10 minutes at least, covered.
  • If the resulting gravy is too thin, you can thicken it up by using cornflour. Dissolve around 1 tbsn of cornflour in 1/4 cup of water and pour into the gravy. It will instantly thicken up. Adjust the seasoning according to your taste preferences. Keep to cool.
  • Once cooled, pour the gravy through a sieve into a clean bowl. Discard any veg or meat mash left behind. This will give you a beautiful, smooth gravy. Your gravy is now ready to serve.
  • To make your Creamy Mashed potatoes- Firstly, boil the potatoes until soft and tender.
  • In a sauce pan, add the milk, butter and cream and simmer on low heat until the butter has melted and the milk is hot. Don’t bring the liquid to a boil!
  • Mash the peeled potatoes in a large bowl with a masher or with your hand.
  • Add the warm milk, butter and cream mixture to the potatoes and with a whisk, whip until there are no lumps remaining.
  • Season with Salt & Pepper. Your Mashed potatoes are ready!
  • All the components of your fancy, restaurant style Grilled Goat-meat chops with gravy and mashed potatoes, are ready! Serve them together with some steamed vegetables and a glass of Red Wine! Enjoy!
