For Masala : First grind fennel seeds , cinnamon , cloves to fine powder.
To this add ginger , garlic and green chilli . Make fine paste of it .
Now heat a pan and add 1 tbsp of oil . Once oil is hot add minced mutton .
To this add chilli powder , turmeric powder pepper powder and the paste we prepared .
Saute the mutton to cook and mix all the ingredients well.
The mutton will turn from pink to brown in colour , this shows the mutton is cooked . Cook until it looks dry.
Now let it cool down , add this to a food processor . To this add fried gram flour ( for better binding ).
Add onions , coriander leaves and curry leaves . Blend to smooth paste.
Now heat oil in a pan , let it heat up. Meanwhile make balls of the dough we made.
Now fry them in medium to high flame . Manage flame , do not crowd the oil .
Drop to fry only when the oil is hot else the balls will loose shape. This will result in drop in temperature.
Keep stirring to get even colour. Once brown completely , transfer to a kitchen towel and serve hot.
Mutton kozhambu preperation :Heat a pan and add oil to it .
Add spices to the oil . Once you smell the aroma add shallots ( 5 ) , pepper and cashew.
Once it's completely cooled add coconut grated to this and make smooth paste in food processor.
To a pan add oil , add saunf then to this add sliced shallots ( 15 sliced )and tomatoes .
Saute them to cook well. Now add ginger garlic paste 1 tbsp and curry leaves.
Saute until the shallot get transparent and looks cooked .
Now to this add the groud paste prepared.
Drop the Kofta in this and let it boil for 2 minutes in low flame .
Then remove off flame and add coriander leaves. Wonderful Mutton Kofta curry / Mutton kola urundi kozhambu Is deliciously prepared .
Goes good with Idly , Dosa , Chapathi or Plain White Rice.
