Pirozhki (Russian Stuffed Bread)

Ingredients

Serves : 7
  • 3 cups for bread : all purpose flour


  • 1 tsp salt


  • 1 cups warm milk


  • 1 tbsp melted butter


  • 1/2 tbsp active dry yeast


  • 1/2 tbsp sugar


  • 1 nos egg


  • 1 nos egg yolk for egg wash


  • 1 tbsp for filling:butter


  • 1/4 cups chopped green garlic


  • 1/2 cups chopped onion


  • 150 gms chevon lamb mince


  • 1 cups sliced mushroom


  • 1 tbsp chopped coriander


  • 1 tbsp chopped mint leaves


  • 1 tsp salt to taste


  • 1/2 tsp cumin powder


  • 1/4 tsp all spice powder

Directions

  • To activate the yeast: - In a bowl put 1/4 cup of milk and add sugar to it. Now sprinkle yeast in it and keep aside for 10 minutes.
  • In a large mixing bowl put rest of the milk, melted butter , egg and salt.
  • Give it a stir.
  • Now add activated yeast and 1 cup of flour.
  • Mix with the help of a spatula and add in rest of the flour.
  • Knead the dough for 3-4 minutes
  • Now cover the dough with a damp cloth and keep it in a warm place for 1 1/2hour and let it proof.
  • For filling :- In a pan add butter and garlic
  • Saute it for a couple of minutes.
  • Now add onion and cook till translucent
  • Lower the flame and add in Chevon goat mince .
  • Add salt and cook on a slow flame , stirring frequently until cooked about 15 minutes.
  • Now add mushrooms, mint leaves, coriander and rest of the spices.
  • Keep the flame high and keep stirring continuously until the filling gets dry
  • Transfer it into a plate and let it cool down
  • Take the proofed dough on a clean surface and roll it into a log
  • Now cut it into 7 equal portions
  • Press each portion into a ball and roll it into a circle
  • Place 2 tbsp of filling in the centre
  • Now l8ft the either sides of the stuffing and pinch it together so that the stuffing doesn't come out of it.
  • Place the prepared Pirozhki on a greased tray keeping the pinched side down
  • Repeat the process with rest of the dough and filling
  • Cover it with a damp cloth for 15 minutes
  • Give an egg wash to them and bake in a preheated oven at 200℃ for 25 minutes or until the surface turns golden.
  • Serve hot
