Add Ajwain,onions,When Onions are dark brown,add mutton and salt,the salt will seal the meat and the juices within.Bhuno the Mutton on a medium high flame for 10-15 minutes till the mutton goes dark in colour.Bhuno well,scraping the bottom to evenly cook the mutton.Add 100 ml water and cook closed on a kow flame till the mutton is 90 percent done.Mix the Ginger and garlic paste with a little water to make a runny paste.Tilt the wok to one side,so the oil is separate,add the paste and cook for 2 minutes.Blend the paste back into the mutton,add red chilli powder and Timur and cook covered till Mutton is tender and oil leaves the sides.This is an excellent Mutton Dish
