Wash mutton & cute in to pieces.
Heat a wok & add cooking oil & of ghee.
Now add the whole spices (cumin seeds, dry red chilli, bay leaf, clove, cinnamon stick, mace, green cardamom). Let it splutter.
Now add onion copped, salt as required & fry until it turns golden brown.
Then add ginger garlic paste & green chilli paste & cooked well.
Then add the powdered spices ( red chilli, turmeric, cumin & coriander) & cooked well until the raw smell gone.
Then add 1/2 cup melon seeds paste & stir well.
Then add the mutton & water. Simmer it till it cooked well. Stir it between cooking otherwise it can burn.
Last but not the list add pinch of nutmeg powder.
