For curry :Grind the chillies to smooth paste . In a mixing bowl take goat liver, coriander powder, cumin powder, 1 tsp ginger garlic paste, turmeric powder and red chilli paste. mix it welll and marinate for an hour. keep it in refrigerator.
In a pressure cooker heat ghee and add whole spices - black cardamom, cloves, bay leaf , cinnamon and saute for a minute.
Add onions and saute till they turn brown . Add ginger garlic paste and wait till raw smell goes off.
Add the marinated liver and add salt. Give it a stir and cook on high heat for 3 minutes.
Add sufficient water and pressure cook for 6-7 whistles.
Once it is cooked remove cooker from heat and let the pressure release.
Meanwhile heat a charcoal on high flame. Take charcoal on aluminium foil place it on curry and add 1 tsp ghee. cover the lid and let curry absorbs aroma.
Remove the lid and put cooker back on heat. Add garam masala and simmer for 5 minutes.
Remove from heat and transfer in serving bowl.
For khuba roti : 1)Take a large bowl and mix all ingredients except ghee well. knead a soft dough. 2) make 6 small portions and roll a thick roti. 3) once roti is done pinch it starting from corner till centre. Add it on tawa and cook on low flame from both sides. 4)Now directly place roti on flame ,cook on both sides.5) Add 1 tsp ghee on top and it is ready .
Dinner is ready . Serve this rajasthani delicacy laal maas kaleji curry with rajasthani khuba roti.
