Ingredients

Serves : 4
  • 500 gms goat meat mince


  • 250 gms goat meat parts (preferably from the leg portion)


  • 4 nos onion ,finely chopped


  • 2-3 nos tomatoes medium, finely chopped


  • 2 nos green chillies, finely chopped


  • 1 tbsp ginger garlic paste


  • 1.5 tsp salt as needed


  • 2 tsp coriander powder


  • 1/2 tsp turmeric powder


  • 1/2 tsp red chilli powder


  • 1/2 tsp garam masala powder


  • 1 nos bay leaf


  • 1/2 inch cinnamon


  • 1 nos black cardamom


  • 3 tbsp oil for cooking


  • 1 cups water as needed


  • 1 tsp for cooking goat meat part(mutton) bouquet garni spices : cumin seeds


  • 14/2 tbsp fennel seeds


  • 4-5 nos peppercorns


  • 4-5 nos cloves garlic


  • 2 nos green cardamom


  • 1 nos bay leaf


  • 1/2 inch cinnamon


  • 1/4 tsp turmeric powder


  • 1/2 tbsp salt


  • 1 cups water

Directions

  • Put the goat meat (mutton)pieces in a pressure cooker along with the bouquet garni, salt, turmeric and enough water
  • Cook till it is three fourth done
  • In another vessel take oil and saute the dry whole spices and add the chopped onions and fry till translucent
  • Add the mince meat, ginger - garlic paste, salt, turmeric powder. Flame should be medium.
  • Once the meat juices dry, continue to saute till mince browns, Add the coriander powder and chilli.powder, give a stir
  • Add the tomatoes and cook till tomatoes become mushy.
  • Keep stirring and sauteing on low to.medium heat so as not to burn the mince. Takes about 5 to 7 minutes.
  • Now add water and let it simmer on medium heat for 15 minutes.
  • Discard the bouquet garni. Strain the liquid.
  • Add the three fourth cooked mutton pieces and the strained stock into the minced meat.
  • Sprinkle garam masala powder and coriander leaves .
  • Simmer on low flame for 20.minutes or till mutton pieces and mince is cooked.
  • Adjust for salt and gravy
  • Serve hot with rice or roti.
