Ingredients

Serves : 5
  • 2 cups maida


  • 1/4 cups ghee


  • 1/4 cups milk


  • 4 cups cold water


  • 1 tsp gram flour


  • 1 tsp lemon juice


  • 1 cups sugar


  • 1 cups water


  • 2 nos cardamom


  • 1 litre milk


  • 1/2 cups sugar


  • 1 pinch kesar


  • 1 tbsp choppe dry fruits


  • 2 cups ghee for deep fry

Directions

  • Take a big mixing bowl and add ghee and ice cubes.
  • Beat it for 8-10 minutes or until ghee becomes creamy
  • Take out ice cubes from the ghee and add maida, cold milk, gram flour, cold water and lemon juice.
  • Mix and make lumps free better.
  • Heat ghee in a pan.
  • Pour 1 tablespoon of batter in a mould. After 30 seconds, add 1 more tablespoon batter and then repeat this process 5 times. Total 6 tablespoons of batter is required for 1 ghevar. Fry till goden brown.
  • Heat milk in a pan for malai, take out 1/4 cup milk and add kesar.
  • When milk becomes thick, add kesar milk, cook for few minutes and add sugar
  • Heat 1 cup wate,r add sugar and make 1 thread syrup.
  • When syrup cools down pour on ghevar
  • Pour malai and spread chopped dry fruits. Malai ghevar is ready to serve
