Ingredients

Serves : 4
  • 1/2 cups white urad dal (soaked overnight)


  • 1 cups boiled black whole gram(desi chane)


  • 1 cups boiled potaotes,cut in cubes


  • 1 cups spicy sev


  • 250 gms curd


  • 1/2 cups tamarind & dates chutney


  • 1/2 cups green chutney


  • 100 gms paneer,cut in small cubes


  • 2 tsp chat masala


  • 1 tsp red chilly powder


  • 2 tsp salt


  • 500 ml oil for deep fry


  • 1 tsp roasted jeera powder


  • 1 tbsp ginger julien


  • 7-8 nos papdi(used for chat)


  • 1 tbsp coriander sprigs for garnish

Directions

  • Drain water from urad dal. Grind dal in coarse paste.
  • Add salt & beat dal in same direction.
  • Now Heat oil in a Kadhai. Once oil heated apply water on your palm and take some grinded dal and spread it on your palm. Drop carefully in hot oil. Drop 3-4 bade at a time.
  • Deep fry these bade on medium flame until light golden color. Take it out on paper napkin.
  • Repeat this process for frying all badas.
  • Now dip these bada in bowl of water for 10-12 minutes. After 10 minutes squeeze them and remove excess water.
  • Now take one mixing bowl. Add potatoes, boiled Chana, paneer, broken papdi pieces, tamarind & dates chutney, green chutney, red chilli powder, chat masala, salt, Roasted Jeera and coriander sprigs. Mix all properly.
  • Now it's time for plating. In serving dish place one bada. Pour whisked curd, Sprinkle chat masala, red chilli powder & roasted Jeera . Pour 1 tsp tamarind and green chutney, place 2 tbsp Chana, paneer and potatoes mixture. Garnish some sev, chat masala and ginger Juliens.
