white urad dal (soaked overnight) 1/2 cups
Boiled Black Whole Gram(desi chane) 1 cups
Boiled Potaotes,cut in cubes 1 cups
Spicy Sev 1 cups
Curd 250 gms
Tamarind & dates Chutney 1/2 cups
Green Chutney 1/2 cups
Paneer,cut in small cubes 100 gms
chat masala 2 tsp
Red Chilly Powder 1 tsp
Salt 2 tsp
Oil for deep fry 500 ml
Roasted Jeera Powder 1 tsp
Ginger Julien 1 tbsp
Papdi(used for chat) 7-8 nos
Coriander Sprigs for garnish 1 tbsp
Drain water from urad dal. Grind dal in coarse paste.
Add salt & beat dal in same direction.
Now Heat oil in a Kadhai. Once oil heated apply water on your palm and take some grinded dal and spread it on your palm. Drop carefully in hot oil. Drop 3-4 bade at a time.
Deep fry these bade on medium flame until light golden color. Take it out on paper napkin.
Repeat this process for frying all badas.
Now dip these bada in bowl of water for 10-12 minutes. After 10 minutes squeeze them and remove excess water.
Now take one mixing bowl. Add potatoes, boiled Chana, paneer, broken papdi pieces, tamarind & dates chutney, green chutney, red chilli powder, chat masala, salt, Roasted Jeera and coriander sprigs. Mix all properly.
Now it's time for plating. In serving dish place one bada. Pour whisked curd, Sprinkle chat masala, red chilli powder & roasted Jeera . Pour 1 tsp tamarind and green chutney, place 2 tbsp Chana, paneer and potatoes mixture. Garnish some sev, chat masala and ginger Juliens.
