Wash mushrooms 2-3 times in salted water.
Cut in to halves or in 4 pieces. Cut apples in 1 inch pieces. Peel onions. Cut 1 onion in cubes.
Cut tomatoes, onions, ginger in to pieces. Keep aside.
Heat oil in a pan. Add garlic. Saute it slight brown. Add 2 chopped onions & cashews. Saute until onions translucent. Add ginger, tomatoes & green chillies. Cover the lid of Kadhai. Saute all until tomatoes get tender. Once done remove from gas.
Now in a separate pan add 1 tsp oil. Add onion cubes and apples. Toss both for a minute or two.
Now once sauted onions and tomatoes cooled grind all in a fine paste.
Now Heat 2 tsp oil in a Kadhai. Add Jeera. Once splutter add bay leaf, cloves, Cardamoms. Saute all until light brown. Add onion and tomato paste. Saute until it separates oil in a Kadhai. Add all spices except salt and Garam Masala. Mix well.
Add mushrooms and stir all. Add 1/2 cup water. Now cook for 4-5 minutes or until mushrooms get tender. Add tossed onions and apples. Add salt and Garam masala. Boil it on simmer for 1-2 minute.
Remove from gas.
Serve hot with chapati, naan or rice. Garnish with grated cheese and cashews.
