Serves 2

  • noodles of lasagna; broken into bite sized pieces 4 nos

  • Mozzarella 1/2 cups

  • Lamb Mince 200 gms

  • Oregano 1 tsp

  • Large Onion;finely chopped 1 nos

  • Garlic Cloves; finely chopped 2-3 nos

  • Olive Oil 3 tbsp

  • Red Chili Flakes 1 tsp

  • Crushed Black Pepper 1 tsp

  • Large Fresh Tomatoes:Blanched and Pureed 2 nos

  • Tomato Paste 3 tbsp

  • Grated Parmesan Cheese 1/4 cups

  • Chopped Parseley fresh or dried one 1/4 cups

    Heat up the olive oil in a deep pot. Add the chopped onions and garlic and saute till the onions are nearly browned.

    Add in the mince along with cumin powder, chilli flakes, crushed black pepper and oregano.

    Next, add in the tomatoes and tomato paste and let it simmer for about 20 mins.

    After 20 mins, it is time to add parmesan and broken lasagna noodles along with a cup of water.

    Let it simmer for another 15 mins or till the water has been reduced fairly and the noodles cooked.

    Take it out in bowls and during serving, sprinkle mozzarella cheese and parsley flakes.

    Lasagna soup is a simplified version of lasagna. This is an effortless preparation and requires the most basic ingredients. It is a great alternative to the classic Lasagna. Absolutely lipsmacking and a super yummy soup as a warm winter starter. This is a fully loaded cheesy extravaganza and will be loved by all the age groups.
