  • 2 1/2 cups all purpose flour

  • 1 cups sugar

  • 1/2 cups butter

  • 1/2 cups refined oil

  • 1/8 tsp salt

  • 2 1/4 tsp baking powder

  • 2 nos eggs

  • 1/2 cups dried cranberries

  • 1 tsp vanilla essence

  • 1/4 cups milk(use as required)

  • 1 tbsp all purpose flour-for dusting


  • Preheat the oven at 160 degree C for 5 minutes.
  • Line a baking tray with a butter paper.
  • Take a bowl and add melted butter and sugar. Cream it well.
  • On the other side, sieve all purpose flour, baking powder and salt together and keep aside.
  • Add refined oil into the wet mixture and mix well.
  • Beat the eggs and add one after another into the mixture and mix well.
  • Add vanilla essence to avoid the raw smell of eggs and mix well.
  • Now add the dry mixture into the wet mixture and mix using cut and fold method.
  • At this time slowly add little milk to get the proper consistency.
  • Finally dust the dried cranberries with little flour and mix into the batter.
  • Pour the batter into the lined cake tin and bake it at 160 degree C for 40 minutes or until a toothpick comes out clean.
  • Allow to cool the cake and demould it and cut into slices.
