All Purpose Flour 2 1/2 cups
Sugar 1 cups
Butter 1/2 cups
Refined Oil 1/2 cups
Salt 1/8 tsp
Baking Powder 2 1/4 tsp
Eggs 2 nos
Dried Cranberries 1/2 cups
Vanilla essence 1 tsp
Milk(use as required) 1/4 cups
All Purpose Flour-For Dusting 1 tbsp
Preheat the oven at 160 degree C for 5 minutes.
Line a baking tray with a butter paper.
Take a bowl and add melted butter and sugar. Cream it well.
On the other side, sieve all purpose flour, baking powder and salt together and keep aside.
Add refined oil into the wet mixture and mix well.
Beat the eggs and add one after another into the mixture and mix well.
Add vanilla essence to avoid the raw smell of eggs and mix well.
Now add the dry mixture into the wet mixture and mix using cut and fold method.
At this time slowly add little milk to get the proper consistency.
Finally dust the dried cranberries with little flour and mix into the batter.
Pour the batter into the lined cake tin and bake it at 160 degree C for 40 minutes or until a toothpick comes out clean.
Allow to cool the cake and demould it and cut into slices.
