Grind soaked rice with curd and 2 cups water. Add remaining ingredients make thin batter.
Cook in the microwave for 2 minutes. Remove it and beat the batter now. Again, cook for 2 minutes in the microwave. Repeat this process until batter becomes soft.
Let the dough cool for sometime.
Mix all the vegetables, mayonnaise, malai, hung curd to make the stuffing mixture.
Take some portion from dough and spread on your hand and put one teaspoon stuffing and give it the shape of cutlets.
Heat oil in a pan and deep fry the cutlets till they turn golden brown.
Delicious stuffed hung curd rice cutlets are ready. Serve them with tomato ketchup or green chutney
