Ingredients

Serves 5

  • FOR DOUGH : All purpose flour 2 cups

  • Ghee 1/3 cups

  • Salt -as per taste 1/2 tsp

  • Ajwain 1 tsp

  • FOR STUFFING - Boiled potatoes 250 gms

  • Ghee 2 tbsp

  • Cumin seeds 1/2 tsp

  • Chopped dryfruits 1/2 cups

  • Amchur powder 1 tsp

  • Ginger chili paste 1 tsp

  • Garam masala 1/2 tsp

  • Daal masala 1 tsp

  • Salt 1/2 tsp

  • Ghee 2 cups

Directions

    Make dough like roti by mixing all the ingredients as mentioned (for dough) above. Set it aside for 30 minutes.

    Heat ghee in a pan and add cumin seeds to it. When seeds crackle, add ginger chili paste and saute for a minute.

    Add chopped dry fruits and saute for 1 minute

    Add potatoes, spices and salt. Saute for 15 to 20 minutes on low flame.

    When done, allow the above mixture to cool.

    Divide the dough into 20 parts and roll it in oval shape. Divide this oval shape into 2 parts. Join them to make proper samosa shape. Add the filling.

    Edges needs to be fixed with some water so that masala remains inside samosa.

    Heat ghee on low flame and deep fry the samosas till they become crispy and golden in colour.

    Serve mini shahi samosa with green chutney or tomato ketchup.
