Ingredients

Serves : 4
  • 2 cups poha/ flattened rice


  • 1 nos onion,finely chopped


  • 1 nos potato,finely chopped


  • 1/2 nos carrot,finely chopped


  • 2 nos green chilies,finely chopped


  • 1/4 cups fried peanuts


  • 1 tbsp oil


  • 1/2 tsp mustard seeds


  • 4-5 nos curry leaves


  • 1/8 tsp asafoetida


  • 1 tsp sugar


  • 1 tsp salt,as per taste


  • 1 1/2 cups coriander leaves


  • 1 tbsp lemon juice

Directions

  • wash the flattened rice and drain completely, keep aside
  • grind coriander leaves and lemon juice to make a green paste
  • heat oil in a pan and add mustard seeds
  • when the seeds crackle, add asafoetida, curry leaves and green chili and saute for few seconds
  • add onion and saute for 1-2 minutes
  • next add the potatoes, carrots and salt and mix well
  • cover and cook on medium flame till the vegetables are cooked
  • now add green paste and saute for few minutes
  • add poha, fried peanuts, sugar and mix well
  • sprinkle some water and cook for 2-3 minutes
  • switch off the gas and serve hot
