Ingredients

Serves 4

  • poha/ flattened rice 2 cups

  • Onion,finely chopped 1 nos

  • Potato,finely chopped 1 nos

  • Carrot,finely chopped 1/2 nos

  • Green Chilies,finely chopped 2 nos

  • Fried Peanuts 1/4 cups

  • Oil 1 tbsp

  • Mustard seeds 1/2 tsp

  • Curry Leaves 4-5 nos

  • Asafoetida 1/8 tsp

  • Sugar 1 tsp

  • Salt,as per taste 1 tsp

  • Coriander Leaves 1 1/2 cups

  • Lemon Juice 1 tbsp

Directions

    wash the flattened rice and drain completely, keep aside

  • 02

    grind coriander leaves and lemon juice to make a green paste

  • 03

    heat oil in a pan and add mustard seeds

  • 04

    when the seeds crackle, add asafoetida, curry leaves and green chili and saute for few seconds

  • 05

    add onion and saute for 1-2 minutes

  • 06

    next add the potatoes, carrots and salt and mix well

  • 07

    cover and cook on medium flame till the vegetables are cooked

  • 08

    now add green paste and saute for few minutes

  • 09

    add poha, fried peanuts, sugar and mix well

  • 10

    sprinkle some water and cook for 2-3 minutes

  • 11

    switch off the gas and serve hot
