heat ghee in a kadai
add the grated carrot, beetroot and bottlegourd and saute for 5 minutes on medium flame
now add milk and let it boil, stirring continuously
when it starts boiling add cardamom powder and sugar, keep mixing
once the mixture becomes thick add malai and cook for 5 more minutes on low flame
when the mixture leaves the sides of the pan, halwa is ready
switch off the flame
garnish with chopped almonds and serve hot
