Ingredients
Serves 8
For Tart Crust:All purpose flour 250 gms
Sugar powder 75 gms
Butter(cold) 125 gms
Ice cold water 1/4 cups
For Lemon curd:Lemon 4 nos
Unsalted butter 200 gms
Sugar 100 gms
Eggs 2 nos
Glazed Cherries 10 nos
Lemon zest 1 nos
Lemon rind slices 6 nos
Mint leaves for garnishing 10 nos
Directions
To make Tart Crust : Chop butter into cubes. Mix flour and sugar and slowly rub the butter into the dry mix.
Mix it in the fold and press technique.
Add little water (cold) if necessary. Round the dough and fold it tight in a cling film and refrigerate it for an hour.
Take out from the fridge and bring it to room temperature before using it. Roll the dough or press it in the Tart tin.
Preheat oven to 180 degree centigrade. Bake it for 20 minutes. Bring them out and cool them on a rack.
To prepare lemon curd : Take lemon juice, zest, sugar and butter into a heatproof bowl. Sit the bowl over a pan of gently simmering water, making sure the water is not touching the bottom of the bowl.
Stir the mixture every now and again until all of the butter has melted. Lightly whisk the eggs and stir them into the lemon mixture.
Whisk until all the ingredients are well combined, then cook for 10 to 12 minutes. Stirring every now and then, until the mixture is creamy and thick enough to coat the back of a spoon. Lemon curd is done.
Let the lemon curd cool. Fill the lemon curd into the baked Tart Crust and garnish it with glazed cherries, mint leaves and lemon rind.
