Heat oil in a pan. Add mustard seeds, cummin seeds, fennel seeds and dried chillies. Let it splutter.
Add shallots and garlic and saute well. Add chicken, turmeric powder and salt to taste. Saute well.
Simmer the flame. Water in the chicken is enough to cook. If it's tender no need to add water. Cover the pan and cook for 15 minutes.
Pallipalayam chicken is done. Garnish it with coriander leaves and serve.
