Ingredients

Serves 10

  • grated carrots 2 cups

  • grated khoya 1/2 cups

  • sugar or add / less as per your taste 2/3 cups

  • sliced pistatios 10-12 nos

  • ghee 2 tbsp

  • green cardamom powder 1/2 tsp

Directions

  • 01

    Pressure cook the grated carrots until 2 whistles.

  • 02

    Heat ghee in a kadhai and add the cooked carrotsĀ andĀ saute till the mix gets dry and raw smell leaves from carrots.

    Now add sugar and khaya and cook tikk it gets thickens. Stir continuously.

    Add green cardamom powder and mix well

  • 05

    Transfer the mixture into a greased tray and flatten it equally. Garnish with the sliced pistachios

  • 06

    Let it set for sometime in the refrigeratoe and cut into squares or diamonds

  • 07

    Carrot barfi is ready to serve.
