Ingredients

Serves : 3
  • 10-12 nos eddo (cut into sticks and soak in the salted water for 10 to 15 minutes.


  • 1 nos onion sliced


  • 2 nos tomatoes chopped


  • 1 tsp ginger and garlic paste


  • 1 pinch asafetida


  • 3/4 tsp turmeric powder


  • 1/2 tsp salt or to taste


  • 3/4 tsp red chilli powder


  • 3/4 tsp coriander powder


  • 1/2 tsp garam masala powder


  • 2 nos green chillies slit


  • 2 nos dried red chillies


  • 1 cups oil to deep fry

Directions

  • Wash the add I sticks and use howl to soak water from them. Heat oil in a kadhai and deep fry eddo sticks till they become golden in color. Drain onto paper towel and keep it aside.
  • Heat 2 tbsp oil in a kadhai. Add whole dried red chillies, asafetida, ginger and garlic paste and and day he it for 1 minute
  • Add sliced onions and stir until they become translucent.
  • Add turmeric powder, salt, red chilli powder, coriander powder, garam masala powder.
  • Now add chopped tomatoes and green chillies. Mix well and cook for 3 to 4 minutes.
  • Add fried eddo sticks and mix well. Cover it with the lid and cook for 8 to 10 minutes
  • Serve as a side dish with chapaati or paratha
