Wash the add I sticks and use howl to soak water from them. Heat oil in a kadhai and deep fry eddo sticks till they become golden in color. Drain onto paper towel and keep it aside.
Heat 2 tbsp oil in a kadhai. Add whole dried red chillies, asafetida, ginger and garlic paste and and day he it for 1 minute
Add sliced onions and stir until they become translucent.
Add turmeric powder, salt, red chilli powder, coriander powder, garam masala powder.
Now add chopped tomatoes and green chillies. Mix well and cook for 3 to 4 minutes.
Add fried eddo sticks and mix well. Cover it with the lid and cook for 8 to 10 minutes
Serve as a side dish with chapaati or paratha
