Boil Arbi and mash well. Add ginger garlic paste, curry powder and salt to taste.
Add cornflour, chopped nuts, raisins and bred crumbs and mix well to the mashed arbi.
Add green chillies and coriander leaves and mix well.
Arbi kofta batter is ready to fry. Apply oil in palm and make small round balls. Heat oil in a wok on medium flame. Fry Arbi kofta balls till golden brown. Transfer it to a tissue paper to absorb oil. Keep the fried koftas aside.
Boil water in a wok. Add onions, tomatoes, cashew, cardamom, green chillies, cloves and cinnamon. Let it boil for 5 minutes. When it's cooked let it cool. Blend the mixture in a blender and keep it aside.
Heat oil in a wok on medium flame. Add cloves and cinnamon. Let it splutter. Add little chopped onion and ginger garlic paste. Saute well till raw smell disappear. Add blended mixture to it. Add dry masala powders (chilli powder, garam masala powder, curry powder), sugar and salt to taste. Mix well.
Let it boil for few minutes. Add 3 cups of water.Cover it and cook till oil floats on top of the gravy. Add crushed kasoori methi and fresh cream. Mix well. Add fried Arbi koftas to the malai gravy. Garnish it with coriander leaves. Yummy Abri Malai Kofta Gravy is ready to serve with hot rice, rotis and flavoured rice.
