Ingredients

Serves : 6
  • 500 gms curd(whisked)


  • 4 nos eggplant


  • 1/2 tsp turmeric powder


  • 1/2 tsp kashmiri red chilli powder


  • 1 cups oil for deep frying


  • 1/4 cups water


  • 1 tsp sugar


  • 1 tsp chat masala


  • 1/2 tsp salt


  • 1 tbsp for tempering :cumin


  • 1 tsp mustard


  • 3-4 nos dry red chillies


  • 1 inch whole ginger


  • 10 nos garlic


  • 2 nos green chilli


  • 10-12 nos curry leaves


  • 3 tbsp vegetable oil


  • 1 tbsp roasted cumin and dry chilli powder


  • 1 sprig coriander leaves for garnishing

Directions

  • Place your frying pan ,add oil and let it heat
  • Slit the brinjal/eggplant add 1 teaspoon salt, turmeric powder, chilly powder Rub on and inside the cut of the brinjal/eggplant the and keep it aside at least for 15 minutes.
  • Mean time, lets prepare the dahi/curdMix water(1/4 cup) in curd and whisk it nicely. The consistency should be thick and creamy(not too runny)Now add sugar,chat masala and saltKeep it aside
  • Now then cook brinjal/eggplant in hot oil.Repeat the same with other batches
  •  Then transferred to thick beaten, flavoured and creamy curd
  • Now for tempering ,take a panNow add oil, once the oil is heatedAdd cumin, mustard and whole dry chilliLet it splutterNow add crushed ginger,garlic and green chilliAdd curry leaves and saute for while(don't burn it)Now transfer the tempring and put it in the ready dahi brinjal/eggplant curd mix
  • Now sprinkle roasted cumin and dry chilli powderAnd topped with coriander  leaves, chili powder, crushed black pepper, 
  • Ready to serve
