Self raising flour 2 cups
Grated Cheese 1/2 cups
Chopped Mixture of Onion,Capsicum,Sweet Corn and Carrots 1/2 cups
Chopped Coriander 1 tbsp
Chili Flakes 1/2 tsp
Salt 1 tsp
Pepper Powder 1/4 tsp
Oil 1/2 cups
Egg 1 nos
Milk 1 cups
Tomato Sauce 3 tbsp
In a large bowl, sieve the flour, then add all the dry ingredients ( cheese, capsicum, onion, carrot, sweet corn, coriander, chilli flakes, salt and pepper etc). Stir them together so they are evenly distributed in the flour.
In a spearate jug, add the three liquid ingredients (milk, oil and egg). Lightly whisk with a fork to combine.
Now pour the liquid ingredients into the bowl that has the dry ingredients and stir until just combined. Do NOT over-mix as this will make the muffins chewy.
Spoon the batter into the muffin cups and bake at the pre-heated oven at 180°C for 15 minutes or until skewer stuck in the center comes out clean.
Remove the pan and allow them to cool slightly.
