For the filling : Mashed & boiled potatoes 2 nos
Fennel seeds 1 tsp
Green chillies (chopped) 1 nos
Red chilly powder 1 tsp
Garam masala powder 1 tsp
Ground nuts 2 tbsp
Raisins 1 tbsp
Salt 2 tsp
For the shell : Maida 1 cups
Cumin seeds 1 tsp
Refined oil 2 cups
Salt 1/2 tsp
Heat a pan with some oil. Fry the ground nuts and Raisins, keep aside.Now in the same oil, add fennel seeds and let them splutter. Then add the mashed & boiled potatoes.
Then add the chopped green chillies, Salt and mix. Then add the powdered masalas, mix and cook till the mixture is done. Then add the fried ground nuts and raisins. Mix and keep aside to cool.
To make the outer shell, knead a hard dough with Maida, cumin seeds, Salt, oil and water. Rest for 10 minutes.
Now take a roundel of the dough, roll to form an elongated roti. Cut it into 2 parts.Now serrate one of the half with knife. Apply some water on the other half, place the serrated half on it.
Now apply some water on the sides, bring the ends together to form the envelope.Fill it with the mashed potato filling. Seal it to form the SAMOSA.
Deep fry them in hot oil, on a medium heat.
