Ingredients

Serves : 6
  • 2 nos eggs


  • 1 1/2 cups all purpose flour


  • 1 2/3 tbsp baking powder


  • 1/2 tsp salt


  • 2/3 cups corn meal(yellow corn flour)


  • 1/2 cups sugar


  • 1 cups milk


  • 2 tbsp olive oil


  • 1/4 cups butter

Directions

  • Preheat oven 350 degree F
  • Whisk flour,cornmeal,baking powder and salt in a mixing bowl.
  • In a large bowl with a hand mixer blend butter and sugar until creamy. Add milk and oil and blend again. Add two eggs and slowly mix it.
  • Slowly add dry mixture to the wet mixture and incorporate nicely.
  • Use greased muffin tin or line up with cupcake liner and pour muffin mixture into 2/3 muffin tin. Baje for 18- 20 minutes until muffins are lightly golden brown.
