Carrot Almond Sheera (with Dried Blue Berry and Cashewnut)

Ingredients

Serves : 4
  • 1 cups finely chopped carrot


  • .5 cups finely grated carrot


  • 1 cups almonds


  • 1 cups brown sugar


  • .25 cups olive oil


  • 1.25 cups water


  • 2 nos cardamoms


  • .5 cups dried blue berries


  • .25 cups cashew nut halves

Directions

  • Soak 1 cup almonds in two cups warm water for one hour. After one hour, rinse and wash the almonds. In a food processor, grind the almonds (alongwith the skin) to a fine paste by adding water. Transfer the thick liquid to a big glass / bowl and keep it aside for later use. (You can also remove the skin of almonds and then grind them. In that case you will need to soak the almonds for atleast 4 hours, otherwise it becomes difficult to remove the skin.)
  • In a food processor grind together the brown sugar and cardamoms to a fine powder. Transfer to a bowl and keep aside for later use.
  • In a pan/wok/kadhai add the oilve oil and heat it for about 30 - 45 seconds. Add the dried blue berries and cashewnuts. Saute till the blue berries bulge up and cashewnuts become golden brown in colour. Remove them and keep them aside on a kitchen paper towel (to soak up excess oil) for later use.
  • In the same pan, into the oil add the carrots (both chopped & grated) and saute for about 8 - 10 mins on low heat. 
  • Then add the almond paste to the pan and mix well. Keep stirring for about 8 - 10 mins on low heat.
  • Now add the powdered sugar & cardamom and mix well. Continue stirring for another 8 - 10 mins on low heat.
  • Then add the fried blue berries and cashewnuts to the pan. Mix well. Continue stirring for about 8 - 10 mins or till you get a thick consistency. (Do the cooking on lowest possible heat.)
  • Switch off and set aside to rest till it reaches room temperature. After resting its consistency becomes more thicker.
  • Serve at room temperature or chilled as per your preference. I personally prefer it at room temperature with sliced ripe bananas.
