Tamarind Egg Fried Rice

Ingredients

Serves : 6
  • 4 cups left over rice or fresh


  • 4-5 tbsp tamarind pulp


  • 1 tsp salt


  • 3-4 nos dry red chillies about


  • 1 tbsp chilli powder


  • 1 tbsp ginger garlic paste


  • 1 tbsp bengal gram or chana dal


  • 4 tbsp peanut


  • 1 tsp mustard seeds


  • 12 nos curry leaves


  • 1/2 cups coriander finely chopped


  • 2-3 tbsp cashew shalloe fried


  • 3 nos eggs


  • 2 nos onion finely sliced


  • 4 tbsp oil

Directions

  • First of all add the chilli powder turmeric ginger garlic paste and salt to the rice and mix well. Keep aside.Heat the oil. Add the mustard seeds and curry leaves.
  • After they crackle, add the dry red chillies and onions.
  • After sauteeing for 2 mins, add the chana dal and the peanuts.
  • Once they are done, add the tamarind paste or water.
  • Now stir in the rice and give it a good mix.
  • Make an omelette with the eggs and cut into bite size strips.
  • Garnish with roasted cashews coriander and egg strips.
  • Serve this splendid rice steaming hot with any dry sabzi or just as it is. Either way it tastes yummy.
