First of all wash the quinoa thoroughly and drain and pressure cook upto just one whistle in 1 cup of water.
Switch off the flame and let the pressure release by itself naturally.
Open the lid and you find the quinoa is boiled, fluffy and chewy.
Now heat one teaspoon of ghee in a wok and roast Quinoa and 2 minutes on a low flame.
Add Milk and stir until boiling.
Let it simmer for 5 minutes, keep stirring occasionally and scrape the sides of the wok.
Add the sugar and coarsely ground almonds and cashews.
Add vanilla extract and cardamom powder and mix well.
Cook for 5 more minutes, or until desired consistency is achieved.
Garnish with dry nuts and saffron strands and serve hot or cold as per the choice.
