Ingredients

Serves : 8
  • 1/2 cups almonds


  • 1 cups dried cranberries


  • 1/2 cups butter


  • 3/4 cups honey


  • 2 nos eggs


  • 3 1/2 cups all purpose flour


  • 2 tsp cinnamon powder


  • 2 tsp anise seed powder


  • 1/2 tsp salt


  • 1/2 tsp baking powder


  • 1/4 tsp baking soda


  • 1 tsp vanilla extract

Directions

  • Using electric mixer , beat butter until fluffy.
  • Gradually add honey,eggs and vanilla beating until smooth
  • In a small bowl add flour, aniseed, cinnamon, baking powder, salt and baking soda
  • Add to honey mixture, m8xing well.
  • Stir in cranberries and almonds
  • Shape dough into two 10×3×1 logs and place on greased baking tray
  • Bake at 180℃ for 20 minutes until the base is golden
  • Remove the logs on wire rack and let them cool for 5 minutes.
  • Reduce oven at 170℃
  • Transfer logs onto cutting board
  • Cut each log into half inch slices and place them back on baking tray
  • Bake for another 20 minutes until crisp
  • Cool on wire rack
