Preheat oven to 200C
Mix chia seeds and water in a bowl and set aside for 15 minutes.
In a large bowl, sift dry ingredients and add cooked quinoa.
In separate bowl wisk together all wet ingredients, including the chia gel.
Mix dry and wet ingredients, also fold in chopped coriander, green chilli and grated beets.
Spoon batter into muffin cups and bake until the edges are golden brown, aprox. 25 minutes.
