Ingredients

Serves 8

  • corn meal 1 cups

  • corn flour 1/4 cups

  • cooked quinoa 1 1/4 cups

  • baking powder 1 tbsp

  • baking soda 1/2 tsp

  • sea salt 3/4 tsp

  • buttermilk 1 cups

  • chia seed 3 tbsp

  • water 9 tbsp

  • vegetable oil 1/4 cups

  • honey 1 tbsp

  • fresh coriander, chopped 1/2 cups

  • green chilli, minced 1 nos

Directions

    Preheat oven to 200C

    Mix chia seeds and water in a bowl and set aside for 15 minutes.

    In a large bowl, sift dry ingredients and add cooked quinoa.

  • 04

    In separate bowl wisk together all wet ingredients, including the chia gel.

  • 05

    Mix dry and wet ingredients, also fold in chopped coriander, green chilli and grated beets.

  • 06

    Spoon batter into muffin cups and bake until the edges are golden brown, aprox. 25 minutes.
