Ingredients

Serves : 8
  • 1 cups corn meal


  • 1/4 cups corn flour


  • 1 1/4 cups cooked quinoa


  • 1 tbsp baking powder


  • 1/2 tsp baking soda


  • 3/4 tsp sea salt


  • 1 cups buttermilk


  • 3 tbsp chia seed


  • 9 tbsp water


  • 1/4 cups vegetable oil


  • 1 tbsp honey


  • 1/2 cups fresh coriander, chopped


  • 1 nos green chilli, minced

Directions

  • Preheat oven to 200C
  • Mix chia seeds and water in a bowl and set aside for 15 minutes.
  • In a large bowl, sift dry ingredients and add cooked quinoa.
  • In separate bowl wisk together all wet ingredients, including the chia gel.
  • Mix dry and wet ingredients, also fold in chopped coriander, green chilli and grated beets.
  • Spoon batter into muffin cups and bake until the edges are golden brown, aprox. 25 minutes.
