Ingredients

Serves : 4
  • 1/2 cups almonds


  • 3/4 cups toasted quinoa


  • 1/2 cups pumpkin seeds


  • 1/2 tsp kosher salt


  • 2 tbsp olive oil


  • 1/4 cups honey


  • 1/2 cups golden raisins


  • 1 cups whole strawberries


  • 1 nos small beetroot, peeled and diced


  • 1 nos banana, peeled and diced


  • 3 tbsp chia seeds


  • 2 nos dates,pitted


  • 2 tbsp oats


  • 2 cups almond milk


  • 2 tbsp honey


  • 250 ml vanilla ice cream

Directions

  • Preheat oven to 350'F.
  • Chop almonds. In a bowl combine almonds, quinoa, pumpkin seeds and salt. Stir in olive oil and honey to thoroughly combine.
  • Spread onto a baking sheet and bake for 20 minutes, stirring few times in between baking.
  • To make smoothie, place all the ingredients (strawberries, beet, banana, chia seeds, dates, oats, milk and honey in the blender and blend until smooth.
  • To assemble, layer good amount of granola and berry smoothie. add some fresh berries and top it up with a scoop of vanilla ice cream.
